Roasted chicken breast with potatoes and cherry tomatoes
Elle has been in Joburg for just over a week so I've been cooking meals for one. I found some very nice recipes over at JamieOlver.com.
This is a super easy and yummy recipe for one. It takes a couple minutes to prepare and then you chuck the plate in the oven. The foil helps to keep all the yummy flavours together. Jamie's recipe is slightly different cos he uses asparagus but the Pick n Pay at Sable Square didn't have that. Sidebar - I could really do with a Woolworths close to me.
The meal still tasted pretty good but the potatoes could have been parboiled first.
What you need for roasted chicken breast with potatoes and cherry tomatoes
- 1 chicken breast
- 6 cherry tomatoes
- 1 potato
- salt and pepper
- Olive oil
How to make it
- Place all the veggies together on a piece of foil. Make sure the potatoes are chopped up. Season with salt and pepper. sprinkle the rosemary leaves and drizzle with olive oil.
- Cut the chicken breast half way and butterfly. Place on top of the veggies and season. Put some olive oil and rosemary on top.
- Put the tray in the oven at 190 degrees. Leave for about 45 minutes and you're done. This can be quicker if you use asparagus instead.
and for something extra, add some peri mayo from Nandos. mmm.
